Ingredients

1 tablespoon oil

150g finely chopped broccoli

1 finely sliced red pepper

6 big eggs, diced 2 spring onions

1 cup milk

a generous teaspoon of smoked paprika

50g cheddar or gruyère, a grated tiny handful of minced chives (optional)

Method

STEP 1 

Preheat the oven to 200°C/180°C fan/gas 4. Half of the oil should be brushed into an 8-hole muffin tray. In a frying pan, heat the remaining oil and add the broccoli, pepper, and spring onions. Cook for 5 minutes. Cool for a few minutes.

STEP 2

 In a mixing dish, combine the eggs, milk, smoked paprika, and half of the cheese. Cooked vegetables should be added now. Fill the muffin cups halfway with the egg mixture, then top with the remaining cheese and a few chives, if desired. Bake for 15-17 minutes, or until golden brown and well done.
