  • Olive oil, for cooking
  • 4 slices of ciabatta or other rustic bread
  • 4 large eggs
  • 2 cloves of garlic, finely chopped
  • 1 red pepper, finely cut into rings (if desired)
  • 1 table. fresh, chopped chives
  • ½ teaspoon. balsamic vinegar
  • A little salt and freshly ground black pepper
  • Serving: A lightly dressed baby leaf salad with herbs
