- Olive oil, for cooking
- 4 slices of ciabatta or other rustic bread
- 4 large eggs
- 2 cloves of garlic, finely chopped
- 1 red pepper, finely cut into rings (if desired)
- 1 table. fresh, chopped chives
- ½ teaspoon. balsamic vinegar
- A little salt and freshly ground black pepper
- Serving: A lightly dressed baby leaf salad with herbs
