This Jamaican curry chicken recipe is a luxury Caribbean chicken dish with Jamaican curry powder and creamy curry sauce.


3 pounds chicken cut to your liking (I used leg and thigh today)
1 tablespoon Jamaican curry powder or more to taste
Salt and black pepper to taste
2 tablespoons olive oil
1 medium chopped onion
2 chopped jalapeno peppers (add chopped Scotch Bonnet peppers for amazing heat and flavour!)
1/4 cup chopped green onions
4 cloves chopped garlic
2 tablespoons chopped ginger
2 tablespoons Jamaican curry powder
1 teaspoon adobo seasoning
1 teaspoon allspice
1 teaspoon dried thyme
14 ounces can be coconut milk (optional – only use chicken broth as an alternative)
1/2 cup chicken broth
3  tomato paste (optional)
1 kg yellow potatoes (page if you like)
Salt and pepper to taste
Hot sauce to taste
