This one-pot chicken cacciatore is a classic Italian delicacy! This version is gluten-free, paleo, and can be made complete in 30 minutes.

INGREDIENTS:-

• 4 chicken thighs
• 1/2 tsp. sea salt, separated
• 1/4 tsp. black pepper (stop AIP)
• 1 tbsp. arrowroot starch
• 2 tbsp. olive oil
• 1 onion, chopped
• 2 cloves of garlic, ground
• 1 cup carrots, diced
• 2 cups of Bella mushrooms, chopped
• 1 cup red bell pepper, chopped (stop AIP, small carrots)
• 2 cups sliced   tomato juice (sub tomato sauce AIP)
• 1/2 cup red wine (sub broth for whole30, see AIP notes)
• 1/2 cup chicken broth
• 1–2 tsp capers (adjust taste)
• 1 tbsp. parsley, chopped
• 2 tsp fresh thyme leaves
• 1 tbsp. fresh, chopped basil
• 2 tsp dried oregano
