• 2 medium-sized Yukon gold potatoes, peeled, cut into 1/2-inch dice
• Salt and pepper
• 2 tablespoons unsalted butter
• Sausage sliced 6 ounces, cut 1/4-inch thick
• ½ medium, chopped onion
• ½ Medium green, seeded, chopped peppers
• 1 ½ cup chopped mushrooms
• 6 large eggs
• ¼ a whole cup of milk
