A rich, hearty, and warm Spanish chicken with Chorizo   – Spanish crispy chorizo, fried onions and
peppers and juicy chicken thighs dipped in red wine and then placed in the oven and sprinkled

1 teaspoon | 15 ml olive oil
225 g chorizo, heard
1 large white, yellow, or brown onion, chopped
2 red peppers, peeled and sliced
1 teaspoon tomato paste
3 cloves, about 1 teaspoon of crushed garlic
1 teaspoon paprika
8 bone between skin and chicken thighs
1 1/4 cup | 300 ml rioja (or other Spanish red wine of your choice)
1 1/4 cup | 300 ml chicken stock
1 bay leaf
thyme shoots
