Ingredients:

Pepper / Garlic Oil
• 20 whole red peppers (spicy type, guajilo or guntur or bydagi pepper I used)
• 20 cloves of garlic
• ⅓ a cup of boiling water
• 3 tbsp vegetable oil

Dry spice powder
• 1 tsp whole black
• 3 cardamom
• 1 tsp cumin seeds
• 5 cloves
• ½ inch of cinnamon
• 1 tsp fennel seeds
1 kg  chicken with bones,
• ¼ tsp turmeric powder
• ½ tsp salt
• 3 tbsp vegetable oil +2 tbsp vegetable oil
• 3 stems or about 20-30 curry leaves
• 1 onion, chopped
• 10-20 cloves of garlic
• 3 tomatoes, ground into a puree
• 1 tsp kashmiri or bydagi chili powder (especially colored)
