Egg Custard Bands (Liu Sha Bao)

These custard buns of melted unripe eggs, or liu sha bao, delight the crowd instantly. It is impossible to say no to these soft pillowcases overflowing with butter and sweet egg custard.

INGREDIENTS

THE WOMAN OF THE ROLE

• ▢4 salted egg yolks
• ▢6 teaspoons 80 g unsalted butter, room temperature
• ▢¾ cup 70 g powdered sugar
• ▢4 tablespoons 50 g of condensed milk
• ▢3 teaspoons 35 g milk powder
• ▢2 ½ tablespoons 30 g custard powder
BAO Dough
• ▢¾ cup (180 ml) whole milk, 110 F-115 F
• ▢1 ½ teaspoon (6 g) dry or quick dry yeast
• ▢ 1 teaspoon (15 g) powdered sugar
• ▢2 cups + 1 teaspoon (300 g) flour for all purposes
• ▢¾ cup (100 g) wheat starch
• ▢½ cup + 1 ½ spoon (70 g) powdered sugar
• ▢ 1 teaspoon (5g) baking powder
• ▢¼ spoon (1 g) salt
• ▢ 1 teaspoon (15 g) vegetable extract
• ▢1 large (30-35 g) egg white
• ▢ 1 teaspoon (15g) of vegetable oil
• ▢ 1 teaspoon (5g) lemon juice or lemon juice
• ▢¼ spoon (1 g) to bake ammonium carbonate
