A light, delicious breakfast for Tuscan Farmers and a delicious egg-canned bean stew with herby gremolata sauce. Healthy and delicious!
Ingredients:-
• 1-2 tablespoons of olive oil
• ½ onion, chopped
• 4 cloves of garlic, finely chopped
• 1 teaspoon chopped rosemary, sage or thyme (or 1 1/2 teaspoon dried Italian spice)
• 1 14 ounces do not sell tomatoes (roasted fire good) or 2 small tomatoes, diced with their juices
• 1 14.5 ounce cannellini beans 0r white beans (or 1 ½ – 2 cups cooked), rinsed and drained
• 1 cup of stock or broth (or water and one billion ounces) can be chicken or vegetables
• ½ teaspoon of kosher salt
• ¼ Spoon chili flakes, to taste more
• 4–6 eggs (vegans used with pan-seared tofu)
• Serve with crumbs or warm tortillas and Gremolata
